The Tour starts off by an Introduction of why and how our Ethnic Quarters were formed, and what were the changes over the years.

The first stop would be at Chinatown we showcase the Chinese culture, a brief introduction to the history of the area. Expect heart wrenching stories of labourers and vices of life.

My experience with Leonard Lo is extremely positive. He is a very experienced and knowledgeable tour guide in many aspects. Giving that he used to be an accountant, I am surprised that he knows so much about food as well. Our tour starts by visiting Chinatown Fujian area to have breakfast. He explains how to order coffee with Singlish. We end up order Kopi O Kosong which means black coffee. Kopi=Coffee in Malay. O means black in Fujian. Kosong means zero in Malay (no sugar added). So Kopi O Kosong means black coffee with no sugar added. If you order Kopi O, then it is black coffee with sugar which is not exactly the black coffee you would expect. He did a very good job by providing us with a chart and give us an excellent example of what Singlish is. We then go to Maxwell Center to have Hainan Chicken Rice. The Chicken is delicious and rice is so tasty. He gave an excellent explanation on how the chicken was cooked just right (use ice water to freeze the cooking process) and how the rice is cooked with the chicken soup and Panda leaves. I am not familiar with Pandan and he was able to give me more examples later so I understand the unique smell of Pandan . From there, we went to URA (Urban Redevelopment Authority) city gallery which is a free museum explaining Singapore land development and resources usage. He did an excellent job explaining many areas of Singapore and the master plan. How the public housing works. He explains how the water is being collected, conserved, recycled and why it is so important for Singapore to be independent on water. We went back to Chinatown complex to have more foods. One of the Michelin store at the food court has delicious chicken curry. The curry is more tasty than any curry I have in other Indian restaurant. Leo explains Singapore's curry is modified for East Asian's taste bud. Overall, I think this tour is excellent and way over my expectation. I learn way more than food and culture. I appreciate our tour guide Leo who I believe made a big difference with our tour.

We went on this food tour with Notel in November 2022. It was a great deal of history discussed and Notel was very knowledgeable. We stopped at three different areas around the city. We discussed the history, culture and food. Each stop was very different and we got a variety of foods to try. Notel had brought an tablet so we could see photos of historic Singapore and really appreciate the city. This tour is a great blend of food culture and city history. I would recommend if you have the time while exploring.

Marcus lead us through Little India, new Chinatown describing the history of people settling in the city. We sampled several representative dishes throughout the day. He was able to thoroughly explain the history of Singapore separating from Malaysia and how the government from day one was committed to treating all people on equal terms. The successful transformation from 3rd world status for a country with no natural resources, limited water supply and limited land mass is fascinating. Social systems offer aid to those who need it ranging from subsidized housing for 80% of residents. Strict enforcement of laws is a foundation of the success where drugs and the social ills from substance abuse are not a problem.

Unfortunately I never got to go on the tour due to my own error of booking the wrong date by accident (booked the day before due to my mistake with flight time). Tour guide showed up at 3pm, we talked on phone at 3:15pm and then told him to go home. I asked if there any way we could do even part of the tour another day, the company said we would have to pay %75 of the ticket price extra to reschedule. I think this was unreasonable because the only thing lost by the company was the guide showing up for 30min of the four hours. Yes it’s my fault completely but they were certainly unaccommodating and I must write what happened. Judge for yourself.
